A little bit about me....
I have always enjoyed baking, not cooking as much but baking.
Burying my hands deep into the ingredients, feeling the different textures, of flours, eggs, milk, nuts, fruits and what ever else my grandmother would throw into the bowl. I have fond memories of standing on a stool at my grandmother's kitchen bench, with giant mixing bowl in sink and my hands in the bowl. You never knew what she would throw in on top of your hands next. The joys of making something from scratch was embedded into me from as early as 7 or 8 years of age.
Growing up over the years, my grandmother (Joyce), cousins and I made marvellous creations in that small kitchen in Moonee Ponds (Vic). Memories were certainly made from those experimental recipes and also the tried and tested recipes my grandmother had hand written in her ginormous bounded book. Joyce loved to bake, she was also a fabulous cook, knew exactly what ingredients went together. She inspired me and I feel she gave me that passion for baking.
My stepfather (Gaetano) is also an inspiration. It is with him (being of European decent) I learnt about home grown fruit. His backyard in St. Albans (Vic) had an abundance of fruit trees, vegetables and Cacti. Gaetano was a chef in the Maltese army, his love for baking took him to the war front and back home. I would either find my step father in the kitchen or in the garden when I came home from school or work.
In the kitchen he made pasta dishes, polish donuts and to die for Apricot pies. He made his own pastry that he had made many times before. It was a shortcrust pastry, a little on the salty side.
I would walk in the front door, into the aroma of sweeten stewed apricots. You didn't want to eat the pies hot... Oh no! You would have to wait until they cooled. They were the best at room temperature or from the fridge chilled.
From these teenage memories and watching, helping in the kitchen with both of these hands-on bakers, my love of baking was developed and molded.
It took me a few years to grow, mature and get in touch with my baking side. I had to find what I was good at, what I enjoyed and what I could use from my experiences.
When my husband Mark, our two children and I moved up to Kinglake West, this was when I decided to take that step forward, unleashing the baking desire in our new home and kitchen.
In 2013 on a social media page, the question was asked would you buy this? with a photo of my large family pie inserted. This is how Nee's High Apple Pies home business first started.
I am now doing what I love to do in my registered home kitchen. Providing individually hand made pies, crumbles and baked cheesecakes. Made with love, passion from me to you.
